Masala Chai

Masala Chai

  • 4 cups water
  • 1 cinnamon stick
  • 6 whole green cardamom pods
  • 6 whole cloves
  • 1 1/4-inch piece of fresh gingerroot, roughly chopped
  • 1 cup whole milk
  • 4 heaping teaspoons Darjeeling tea leaves
  • 4 teaspoons sugar
  • Sprig fresh mint

In a sauce pan combine the water, cinnamon, cardamom pods, cloves, and gingerroot. Boil vigorously for 5 minutes. Then add milk, tea leaves, and sugar and bring to a boil again. Immediately remove from the heat, add mint and cover for a few minutes to infuse. Strain and serve in teacups.

Makes 4 servings.
