Masala Chai

4 cups water

1 cinnamon stick

6 whole green cardamom pods

6 whole cloves

1 1/4-inch piece of fresh gingerroot, roughly
chopped

1 cup whole milk

4 heaping teaspoons Darjeeling tea leaves

4 teaspoons sugar

Sprig fresh mint
In a sauce pan combine the water, cinnamon, cardamom
pods, cloves, and gingerroot. Boil vigorously for 5 minutes. Then add milk, tea leaves, and sugar and bring to a boil again.
Immediately remove from the heat, add mint and cover for a few minutes to infuse. Strain and serve in teacups.
Makes 4 servings.
